The crianza Rioja Olartia, 100% tempranillo, comes from the vineyards surrounding our winery in Rodezno (La Rioja Alta).
These vines are 40 years old on average, trellis-grown and picked by hand.
We ferment them with their native yeasts, with half of the grapes destemmed and the other half entire. They are fermented in small quantities and do not need to be chilled, with daily punching down for 25 days.
This crianza rests in the barrel for 14 months: 50% in French oak and the other 50% in American oak from Pennsylvania.
Next, we put the batch all together in a vat where it will rest for about a year.
This is an unclarified wine, which is only filtered, using very coarse cellulose meshes, just before it is bottled. There may appear fine lees in the bottom of the bottle, which are evidence of its natural evolution.
Enjoy it in good company and do not subject it to sharp changes in temperature.
Serving temperature 16°C
